These no bake keto pecan pie bars taste just like your favorite pecan pie! There is even a crust and a caramel pecan pie layer – both!

Very few seasons bring out my sweet tooth quite like Thanksgiving and Christmas. One of my all-time favorite desserts every year is the pecan pie! I knew I had to come up with a low-carb recipe that is super easy to make and doesn’t require any baking. I did it! You are going to love these bars.

Low Carb Pecan Pie

This isn’t a pie, you will cut them into bars – which makes them a really quick and easy keto treat.

Molasses In Keto Bars – Is Molasses Keto-Friendly?

Molasses isn’t typically keto-friendly. However, I used such a small amount in this entire batch, that it didn’t affect the total amount of net carbs.

Here’s how it breaks down:

  • There are 15 grams of carbs in 1 tablespoon of molasses
  • There are about 3 teaspoons in a tablespoon
  • The molasses added a total of 5 grams of carbs to the entire batch of bars.

To figure the net carb amount for each bar, you have to add up the total amount of carbs, subtract the fiber, and then divide by how many bars you cut.

If you want to lower the carbs in this recipe even further, you can replace the molasses with sugar-free maple syrup. It will still turn out just as delicious and with a lot fewer carbs.

I really like cutting my treats – even the l0w-carb ones – into grabbable sizes. This way I know I won’t overeat them (even though they are so good I could probably eat the entire pan).

This is a really easy recipe that you can make ahead, freeze, and use in your meal-prep. It’s a good idea to prep for your snacks and desserts too, that way you can control how much you eat so you don’t go over your macros.

If you are going to freeze the bars, slice them first, and then freeze them in a freezer-safe container with a lid. You can freeze them in a freezer bag, just make sure they are in a single layer so they don’t freeze in a large pile.

When you are ready to thaw them out, just let them set in the refrigerator overnight.

They will stay fresh in the freezer for up to 6 months.

Another way to store the bars is in the refrigerator. Keep them in a sealed container in the refrigerator for up to a week.

INSTRUCTIONS:

To create the crust layer: mix together the almond flour, cinnamon, powdered sweetener, and dash of salt.

Stir in melted butter. Pour the mixture into a parchment paper lined pan (I used an 8×8 pan) and press down firmly. Set aside for now.

To create the caramel/pecan layer: combine all the ingredients, minus the xantham gum and pecan halves in a pot. Begin to melt over medium heat.

Stir in xantham gum and bring to a slight boil. Continue to simmer until the mixture has thickened. Remove from heat.

Pour the caramel mixture onto the crust layer. Top with pecan halves.

Place the bars in your freezer to set, about 3 hours.
