Spicy Baked Vegan Popcorn Seitan:

In our last post, we made chicken style seitan. Now what? You don’t want to eat some hot curries or grill them? Then try this spicy baked vegan popcorn seitan recipe. You will be surprised how addictive these golden and extremely crispy spicy baked vegan popcorn seitan are. I have fried a batch too, but believe me the baked ones tasted the best.

So, here it it! My super easy spicy baked vegan popcorn seitan. They are crispy on the out, perfectly seasoned and soft inside, and they taste heavenly. Just dip them in buffalo ranch or in 2-minute avo sauce, and you can taste heaven in each bite.

Spicy, but not loaded with heat: that’s how these vegan popcorn seitan are. I have used some store-brought Cajun seasoning for this and couldn’t be happier. The spicy Louisiana style Cajun seasoning blend work perfectly with seitan. Plus, they add some mild red hue to the tiny seitan bites too. But the slurry is the chief ingredient that adds a flavorful profile to the seitan chunks.

The slurry is a mixture of soy sauce, hot sauce, Cajun seasoning and apple cider vinegar. I also added some aquafaba to this mixture. I used the Frank's red hot sauce for this recipe. Add this to the seitan chunks and let it stand for ten to fifteen minutes. The seitan chunks soak the flavor really well. Then make the flour mixture, which you will use for dredging and coating.

The flour mixture is a combination of white flour+panko breadcumbs+paprika+Cajun seasoning+garlic powder. Add the half of the flour to the marinated seitan chunks and shake to coat well.

Then dip the coated seitan into aquafaba (yay, the magic liquid) and then add to the flour mixture to coat well. While coating, work with one piece at a time. Set aside until you coat rest of the seitan pieces.

Now you have two options: either fry the seitans or bake the seitans. I pan fried one batch and then baked the rest of the batches. (the above picture is the pan fried one. You can deep fry these too) Preheat the oven to 350F and place the seitan on a greased the baking sheet and bake until golden brown. (exactly 20 minutes) Out of both the versions, we liked the baked ones more.

Prep Seitan Chunks:

  • Cut seitan into bite size pieces.
  • Add liquid slurry and mix well to coat.

  • Allow the seitan to rest in the liquid for ten minutes.

Step-2:

Prepare the Flour Mixture:

  • Spicy Baked Vegan Popcorn Seitan Recipe (10)Mix ½ cup of all-purpose flour(use rice flour or oats flour if gluten-free) with 1 cup Panko bread crumbs, paprika and Cajun seasoning.
  • Add garlic powder and mix well.

Step-3:

Dredge and Coat:

  • Add half of the flour mixture to the seitan and mix well to coat.

  • Now dip each pieces of seitan into aquafaba and dredge in the flour mixture for the final coat.
  • Work with one seitan piece at a time for the best results.

Step-4:

Bake or Fry:

  • Place all seitan pieces on a greased baking sheet and brush them lightly with oil.

  • Bake for twenty minutes in a preheated oven at 350F until the seitans are crispy.
  • Your spicy baked vegan popcorn seitan is ready to savor.

  • If frying, add 2 cups of oil in a pan and allow it to heat well.
  • Add seitan pieces into the hot oil and fry until golden brown.
  • Serve with buffalo ranch or 2-minute avo sauce.

Ingredients

  • 2-3 cups Chicken style Seitan

Slurry:

  • ¼ cup hot sauce
  • 2 tablespoon soy sauce
  • 2 tablespoon aquafaba, (add in the end)
  • 1 tablespoon Cajun seasoning

Notes

  • You can add more hot sauce in aquafaba to make the popcorn seitan more hot.
  • Add some cayenne pepper powder to the flour mixture to add more heat.
  • You can freeze the coated seitan and bake them later too.
  • If you want to store the baked popcorn seitan, refrigerate after cooling down and reheat it in the oven(not in microwave) before serving.

      Michelle, I make chicken style seitan at home. Check the recipe index, in main course for the recipe. Aquafaba is the brine from a chickpea can. That is a great vegan egg replacer.
