One of my favorite keto recipes and perfect for summer! I spread this on cucumbers or jicama sticks, bacon, or low carb crackers. You can also serve it as a side! It’s so refreshing and super easy to make, just crisp the kale, throw the ingredients together in a food processor, and blend!

Simple Tuna Fish Salad

Keto salads are a staple in our RV because they’re super easy to throw together, and they’re such an easy way to get a good volume of food. This salad is great because the grilled zucchini adds a bit of warmth and just pulls everything together so beautifully.

6-Ingredient Root Beer Slow Cooker Pulled Pork

Okay, I know I’m cheating a little bit because this recipe isn’t ready in minutes, but you can throw it together in the morning, get all the things on your to-do list done, and then eat when you’re ready! Bonus: if you’re in need of a carb-up, you could serve this with a sweet potato (like the photo). Otherwise, another low-carb veggie cooked in your favorite fat would be the perfect keto meal.

The key to nailing this recipe in minutes: prep the veggies ahead of time! You can enjoy this recipe as it is, meat-free, or incorporate some protein — I suggest pork belly. Mmmmmm.

Bread is not a meal, which is why you should definitely make this recipe and then top it with mashed avocado, flake salt, and a drizzle of olive oil. Keto avocado toast, yes please! Craving something sweet? Toast the bread and then smear a bit of butter flavored coconut oil on top, sprinkle with cinnamon and a bit of granulated keto-friendly sweetener, and boom: keto cinnamon toast.
